How to cook cassava is something we can teach you. The “enyucado” is a typical dish from several provinces of Costa Rica, its indigenous ingredients such as cassava make this traditional recipe an inspiration for all natives and foreigners, so today we bring you this great dish. Ingredients:

  • 400 gr. beef jerky
  • 1 kg cassava
  • 1 tablespoon butter
  • 1 large tomato
  • 2 eggs
  • Achiote
  • 1 sauce
  • 1 celery stalk
  • 1 tbsp. chopped coriander
  • ½ chopped sweet chili
  • 3 garlic cloves
  • 1 medium onion, chopped into squares
  • 1 sweet chili
  • Salt
  • 2 tablespoons of coconut oil
  • Salt and pepper
  • Enough oil for frying

Preparation:

Cook the meat in little water  with the sweet chili, coriander, onion, celery and salt for approximately 35 minutes. Once cooked you must grind it.
2. Then cook the peeled cassava in salted water, until smooth, grind it hot and mix it with  butter
3. Then heat the coconut oil in a frying pan, add the annatto, the peeled and well-chopped tomato, the  sauce and at this point add the meat. Add a little water if necessary.
4. Then spread the cassava with a tablespoons on a blanket making tortillas, place a tablespoon of meat in the center, and close tightly into small cylinders
5. Finally fry in very hot oil, until golden brown, place on absorbent paper.
